Quebec Milk-Fed Veal chops with fruit salsa
Yield: 4 servings

  • 4 Quebec Milk-Fed Veal chops
  • 125 ml (1/2 cup) red onions, chopped
  • 2 ml (1/2 teaspoon) crushed Chilli peppers
  • 125 ml (1/2 cup) orange peppers, diced
  • 30 ml (2 tablespoons) citrus olive oil
  • 1 ripe mango, diced
  • 125 ml (1/2 cup) fresh strawberries, diced
  • 30 ml (2 tablespoons) fresh lemon juice
  • 45 ml (3 tablespoons) fresh tarragon, snipped
  • Salt and pepper to taste

Preparation
  • Cook milk-fed veal chops on the barbecue (BBQ) or in a frying pan for 3 to 5 minutes on each side.
  • In a saucepan, brown onion, chilli pepper and diced orange pepper in oil for
    2 minutes. Add the remaining ingredients, seasoned to taste and continue cooking for 2 minutes.
  • Serve salsa on chops with cucumbers slightly sautéed in oil and fresh tarragon.
