Quebec Milk-Fed Veal chops with fruit salsa |

- 4 Quebec Milk-Fed Veal chops
- 125 ml (1/2 cup) red onions, chopped
- 2 ml (1/2 teaspoon) crushed Chilli peppers
- 125 ml (1/2 cup) orange peppers, diced
- 30 ml (2 tablespoons) citrus olive oil
- 1 ripe mango, diced
- 125 ml (1/2 cup) fresh strawberries, diced
- 30 ml (2 tablespoons) fresh lemon juice
- 45 ml (3 tablespoons) fresh tarragon, snipped
- Salt and pepper to taste

Preparation
- Cook milk-fed veal chops on the barbecue (BBQ) or in a frying pan for 3 to 5 minutes on each side.
- In a saucepan, brown onion, chilli pepper and diced orange pepper in oil for
2 minutes. Add the remaining ingredients, seasoned to taste and continue cooking for 2 minutes.
- Serve salsa on chops with cucumbers slightly sautéed in oil and fresh tarragon.
