Quebec Milk-Fed Veal scaloppini with
avocado in green pepper sauce

- 50 ml (3 tbsp) canola oil
- As required all purpose flour
- 6 Quebec Milk-Fed Veal scaloppini (40 g each)
- 1 ripe avocado, thinly sliced
- 15 ml (1 tbsp) butter
- 100 ml (1/2 cup) white wine
- 1 pkg “O’Sole Mio” Pepe Verde sauce
- Salt and pepper, to taste

Preparation
- Heat oil in skillet.
- Lightly dredge the milk-fed veal scaloppini in flour and sear each side in skillet for approx. 1 minute. Set aside.
- In the same skillet, remove excess oil, melt butter, add avocado and cook for
approx. 1 minute. Deglaze with white wine. Reduce by half.
- Add the “O’Sole Mio” Pepe Verde sauce and mix well.
- Add the milk-fed veal scaloppini and stir gently. Let simmer until desired consistency has been reached.
- Salt and pepper to taste.
